Recipe: Cranberry Popcorn Deluxe



I love to create and try new recipes, and for Christmas, both my mom and my best friend, gave me subscriptions to two different Taste of Home magazines. There are many great recipes in the magazines, and below is an easy, guilt free, sweet tooth satisfying, snack recipe that I wanted to share.

Ingredients:

  • 8 cups of air-popped popcorn
  • 3/4 cup dried cranberries
  • 1/4 cup slivered almonds
  • 1/4 cup pecan halves
  • 1/4 cup honey
  • 3 Tbsp. butter
  • 2 Tbsp. maple syrup
  • 1/4 tsp. almond extract

Directions:

  1. In a shallow roasting pan, combine the popcorn, cranberries, almonds and pecans.
  2. In a small saucepan, combine honey, butter, and syrup. Cook and sir over medium heat until butter is melted. Remove from the heat; stir in extract. Drizzle over popcorn mixture and toss to coat.
  3. Bake at 350 degrees for 15 minutes, stirring every 5 minutes. Cool on a wire rack, stirring occasionally. Store in an airtight container.
