Recipe: Crispy Roll
Here’s a quick, easy dessert to try I found in the Company’s Coming Kids Cooking cookbook. I made it last weekend, along with some carrot cake to share for Easter dinner. It was definitely a hit, especially with kids.
1 cup light corn syrup
1 cup sugar
1 cup peanut butter
3 Tbsp. butter
6 cups rice krispies
Filling
1/2 cup butter softened
2 cups powdered sugar
1 cup cocoa
1/4 cup water
1 tsp. vanilla flavoring
Put the syrup, sugar, peanut butter and butter into a saucepan. Bring to a boil over medium-high heat, stirring constantly. Remove the saucepan from the heat.
Mix in the rice krispies until coated. Place the waxed paper on the counter that has been dampened with water, so the paper will stay in place. Press the cereal mixture into a rectangle about 10″ x 15″ on the waxed paper. Let stand for 15 to 20 minutes before putting on the filling.
Filling: Put all 5 ingredients into a bowl and beat on medium speed until smooth, adding a bit more water if it is too thick to spread. Spread over the rice cereal mixture using a rubber spatula. Roll as for a jelly roll, using the was paper to help get it started. Wrap the rol in plastic wrap and chill. Slice thinly to serve.
