Recipe: Easy Chicken Salad
Here’s a good recipe to try for the upcoming Memorial Day weekend. It is easy to make and tastes great!
Easy Chicken Salad
1 cup mayo (thinned with milk and lemon juice)
2 cups cooked chicken (cut into pieces)
1 cup grated carrots
1 cup chopped celery
2 Tbsp. chopped onion
1 small package slivered almonds (browned)
1 lb. can shoestring potatoes
Brown the chicken in frying pan coated with olive oil. Remove the chicken when fully cooked and cut into pieces and let cool. In mixing bowl, add all ingredients together and stir. Add the chicken. Add the shoestring potatoes to the top, just before serving.
