Recipe: Cheese Filled Ginger Bread
If you like ginger bread, you’ll love this one. I tried this recipe last weekend, and it was simply delicious! The cream cheese filling reallycompliments the recipe.
Directions:
- In a mixing bowl, beat the first four ingredients until smooth; set aside. In a large bowl, combine the flour, sugar, baking soda, salt and ginger. In another bowl, beat the eggs, milk, oil and molasses until smooth. Stir into dry ingredients just until moistened. Fold in walnuts. Spoon a half of the batter into a greased and floured 9 x 9″ pan. Top with the reserved cream cheese mixture. Carefully spoon remaining batter over filling. Bake at 350 degrees F for 40-50 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
- For glaze, combine about 1 cup confectioners sugar, 1 Tbsp. butter, 1 tsp. vanilla and enough milk to achieve desired consistency. Drizzle over bread. Store in the refrigerator.
Serve either warm or cold. Both ways are equally good.
