Recipe: Zucchini Boats



Here’s a good recipe I found on Pinterest to try for those summer gatherings. It is easy to make and works great as a side dish, or appetizer.

Zucchini Boats

2 Zucchini’s
1 Package Cherry Tomato’s
Bread Crumbs
1 Package Mozzarella Cheese
Olive Oil
Crushed Garlic
Salt & Pepper

Cut the zucchini’s in half lengthwise and trim a little off the bottom, so it sit flat in a baking dish. Scoop out the center where the seeds are with a spoon.  Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper. Arrange halved grape tomatoes into the grooves, sprinkle with bread crumbs. Bake in a 350 degree oven for about 30 minutes.  Remove and place shredded mozzarella cheese in between the tomatoes. Place the zucchini boats back in the oven for a few minutes using the broiler heat to melt the cheese. Take out when golden and bubbling. Remove and drizzle with olive oil and  then sprinkle with grated parmesan.
